TVOut software provides the best framerate but doesn't manage all applications (no games and no OpenGL support). Screensplitr framerate is far more lower but it is compatible with all applications and games.
These two softwares require an AV video wire (see the iPhone AV/USB from USBfever, that also allows battery charge).
